Lemon Butter Cod
Serves: 2
Prep time: 10 minutes
Cook time: 20 minutes
Total time: 30 minutes
Ingredients:
2 - 6 oz wild-caught cod filet(s)
2 tablespoons of grass-fed butter (I like Kerry Gold butter). If you prefer to avoid dairy, you can substitute the butter with organic ghee
3 Organic garlic cloves, minced
1 tsp sea salt
1 tsp black pepper
Juice of 1 organic lemon
2 tablespoons of organic parsley
1 bunch of organic asparagus, bottoms discarded
Directions:
Pat and dry cod filet(s) with a paper towel and set aside.
In a medium pot, heat butter over medium heat until melted.
Once the butter is melted add the cod. Season with salt, pepper, and lemon juice. Cook for 2-3 minutes on each side until flaky.
Add garlic tops, allowing it to lightly steam with cod and butter sauce.
Once cod begins to flake, top cod with garlic to avoid overcooking and lightly cook for 1 more minute.
Once cod is fully cooked remove from heat, top with parsley, lemon slices and enjoy!
I served this dish over quinoa but you can serve it with zucchini noodles, over rice, or with roasted potatoes!!
